OK, so we may not have dishes that start with every letter of the alphabet, but you will want to span a wide range of choices. You may have meat-loving, breakfast-eating guests. The guest list might also include vegetarians, or grazers. Don’t leave anyone out.
While brunch is typically heavier on the breakfast items, don’t shy away from lunch foods. After all, there may be some folks who, anticipating a later meal time, have already nibbled on a bit of breakfast that morning.
What to skip:
People often want to try everything at brunch buffets, so we recommend that you don’t bother with something as mundane as a cheese and cracker plate, vegetables and dip, or plain fruit. Don’t allow guests to fill up on these things before trying all the dishes that have pizzazz. Think of using these ingredients in dishes that are interesting and special.
The lighter side:
Quiches and egg casseroles are popular fare for brunch. We found a delicious and light dish that is a slight break from the norm.

Pastas are great for brunch, especially if they include ingredients that are unique.
- Start by creating a roux of ¼ cup olive oil, ¼ cup butter, and 1 ½ Tbs flour.
- Then add 1 can of chicken broth
- Stir until thick and creamy.
- Lower heat and add salt, pepper, and garlic and lemon juice (3tsp).
- Cook 5 minutes
- Add ham chunks, mushrooms, chicken ( or shrimp) small broccoli florets, sun-dried tomatoes, and artichoke hearts and simmer 8 minutes.
- Serve over pasta and sprinkle with Parmesan cheese.
- The great thing about this recipe is that you can change out the ingredients you add to the sauce.
Go for the gusto:
Want something that is for the bigger eaters of the bunch? Here’s something that can be prepared the day before and baked that morning.
Sausage English Muffins
- Brown 1 package of Jimmy Dean Sausage
- Put 2 bottles of Old English Cheese, 1 TBS Worcestershire sauce, 2 TBS butter and a dash of hot sauce in the microwave to melt.
- Mix and add sausage
- Halve English Muffins and place on cookie sheet
- Spread the mixture evenly onto English Muffin halves and place cookie sheet in the freezer.
- After frozen, place the muffins in an airtight container and put back into freezer.
- The next morning, bake frozen muffins at 350 degrees for 20 minutes and serve.
